The Sparge

Start sparging
Start adding sparge water to help release more sugar.

After the first runnings have drained from the tun start slowly adding your sparge water to the grain bed to help rinse out the remaining sugar.

add the sparge water to the tun
Slowly add the water to the tun.

Make sure the grain bed does not become exposed, you want to keep about half an inch to an inch of water above the grain bed.  Don't forget to keep your sparge water at the right temp, too hot will rinse astringent tannins from the grain husks, too cool will keep the sugars from rinsing completely.

keep the sparge water just above the grain bed
