Strike Water

My desired amount of water, usually 1.5-2 quarts/lb of grain, goes on the burner. I pour in an extra couple of gallons just in case I need it, put the lid on, and wait a few minutes.

Using ye olde digital probe thermometer (like in the days of yore) I monitor my strike water temp. The alarm goes off at a few degrees below what I'm shooting for to allow for carryover heating. The probe wire is not submersible, but I can usually get the probe to hang safely by wedging it with the lid. I've also got a floating dairy thermometer, which has served me very well for many years. I just like the fact that I can leave the lid on while I'm heating my water.
